Shisen Hanten, a prestigious two-MICHELIN-star Sichuan restaurant nestled within Singapore's Mandarin Orchard, is renowned for its Chen's Mapo Tofu, a signature dish featuring silky tofu stir-fried in a spicy, aromatic Sichuan pepper-infused sauce. At the helm is Executive Chef Liew Tian Heong, who collaborated with Shisen Hanten's Chen Kentaro to craft the menu and concept for this laid-back eatery, which has received the prestigious MICHELIN Bib Gourmand accolade in 2019, 2021, 2022, and 2023.
Chen's famed namesake dish has been reimagined here as Mapo Don. Beyond the bold spice and the tantalizing mala sensation from Sichuan peppercorns, the meat sauce offers a rich depth of flavor, thanks to the imported fermented broad bean paste from the Sichuan-Pidu district. Meticulously prepared with velvety soft tofu upon order, the mapo tofu finds its perfect pairing on a bed of fluffy Hokkaido white rice.
